Spring Pea and Mint Salad (That is of course gut healthy)

In my house hold im the queen of salad. I have this knack for tossing together stuff in a bowl that is amazing. That’s why i document it. I know it will benefit YOU! I made this on the whim and it was definitely blog worthy.

I personally try to eat seasonally and in spring peas are in season… while i couldn’t get them fresh at the farmers markets i totally bought them frozen… peas are normally a spring vegetable. While most people have peas regularly its not something i/we have regularly. Even if i am buying frozen i try to buy seasonally. Anyway long story short… i made this lovely salad that can be enjoyed warm or cold.

If you want to enjoy warm… serve the broccoli and peas warm… If you want to serve cold. cook and cool the broccoli and peas before adding them to the rest of the ingredients.

This salad is packed with vegetables that are going to help feed your gut bacteria. Nutrition to keep you healthy and flavour to keep you satisfied. Broccoli, peas and spinach are packed with fiber to help keep you regular. Having dietary fiber is really important for maintaining a healthy gut so the food is moving through you not getting clogged up.

Pea and Mint Salad

Prep Time 15 mins

Ingredients
  

  • 1 cup Frozen Peas
  • 1 cup spinach per person
  • 1/2 cup zucchini per person
  • 1/2 red onion
  • 1 clove garlic
  • 1/2 head broccoli
  • 1 handful fresh mint
  • 1 tbs lemon zest
  • 1 tbs olive oil
  • 1 Lemon

Instructions
 

  • Juice + zest lemon. To make dressing mix zest, lemon juice and olive oil in a small bowl and set aside.
    In a pan lightly cook the onions and garlic. Once softened add chopped zucchini and lightly warm. Don't overcook until they are soggy. Boil the peas and steam the broccoli.
    In a bowl mix all ingredients with spinach and freshly chopped mint. Add dressing and season with salt and pepper.
    You can have this salad warm or cold. If serving cold don't cook the onions or zucchini and omit the garlic. Just cool the peas and broccoli before adding the salad.
