Zucchini Pesto Salad (Low Histamine + Low Fodmap)

Eating fresh real food is a great place to start on your healthy eating journey. Your diet is VERY important for your overall health and wellbeing.

With all the different diets and guidelines out there it can be confusing how to eat healthy. The one common denominator is that vegetables are healthy and you need to bulk your diet with more veggies. Unfortunately not all veggies can agree with you and your gut. In fact some vegetables can be very aggravating depending on your current gut health status and certain veggies could causing you some symptoms or bloating. One very very safe vegetable is Zucchini… however its not very tasty or exciting, which is part of its appeal. You can add it to anything. Its flavour is not overpowering (because it doesn’t really have a flavour) it can bulk sauces, add to salads, use in soups, smoothies etc.

This salad is a simple, low allergen, low histamine, low fodmap salad that is guaranteed to leaving you feeling happy healthy, light and satisfied. You might be struggling with SIBO or some gut issues like bloating, being a low fodmap friendly recipe this shouldn’t bloat you. Having also struggled with histamine issues myself I’ve always got a few low histamine recipes up my sleeve for when I need them. I have done a lot of research into low histamine foods and played around with recipes that help to reduce the histamine load. This is a pretty safe, low allergen and health salad recipe to enjoy.

This salad is loaded with flavour because zucchini is pretty boring and bland and basil is a great accompaniment to boost the flavour and the excitement factor as well as adding in some amazing colour.

I have used a spiralizer to create my “zucchini noodles” but you can also use a standard mandolin or a julienne peeler to create these noodles or ribbons with a potato peeler. You will also need a food processor or a blender to make the pesto unless you want to do it the old fashions way.

Ideally you will want to accompany this salad with a meat or protein source like chicken, fish, beef or lamb. Personally we have enjoyed this with chicken chunks for a salad bowl and as a side salad with steak. Enjoy.

Zucchini and Pesto Salad

Equipment

  • Vegetable Spiralizer or Vegetable peeler

Ingredients
  

  • 1 Zucchini
  • 2 Cucumbers
  • 2 cups mixed salad leaves
  • 1 Bunch Basil
  • 1/3 cup Extra Virgin Olive Oil
  • 2 tbs Apple Cider Vinegar
  • Salt and Pepper
  • 1/3 cup pumpkin seeds (or pepitas)

Instructions
 

  • Chop cucumber into chunks. Set aside in a large salad bowl.
    Spiralize Zucchini or peel into ribbons if you don't have a spiralizer. You can also use a mandolin and just Julienne the zucchini. Add to salad bowl.
    To make Pesto, add bunch of basil to a food processor (stalks removed) salt and pepper, 1/3 cup pumpkin (or pepita) seeds, EVO and ACV and pulse to combine. You want the pesto chunky not smooth.
    Once made, add to salad bowl with the salad leaves mix, and toss through 1 heaped table spoon of the pest per person. Toss thoroughly to cover in the pesto.
    Enjoy with a side of protein like chicken, sausages, beef, lamb etc.
