Banana Bread, GLUTEN FREE (AND Vegan)

Now im not vegan by any means but i tagged vegan because, well it is. This gluten free banana bread is a really good snack thats gut friendly and healthy. Hopefully you give it a try even if you are not vegan… if you are then you’re welcome 🙂

This is made using chickpea flour which is really high in fiber and out of all the legume family. Chickpea flour can cause some gas and bloating in some people if they have an imbalance of beneficial bacteria in their gut so don’t go overboard on consumption here. Chickpea flour contains lots of soluble fiber and as long as you are hydrated it will help to sooth the gut and move through easily, because ti absorbs water as it is digested. It is also a prebiotic (aka food for you gut bacteria).

Gluten Free, Vegan, Egg Free

Cook Time 40 mins
Servings 8 Slices

Equipment

  • Food Processor, Loaf tin, Oven

Ingredients
  

  • 2 Banana's Ripe
  • 1 cup Coconut Milk
  • 1 + 1/2 cup Chickpea Flour Or Besan Flour
  • 1 tbs Tapioca Flour (Or arrowroot flour)
  • 1 tbs Psyllium Husks
  • 1 tsp Banking Powder
  • 1/4 cup Honey or sweetener of choice
  • 2 tbs Coconut Oil Melted
  • 1 tsp Apple Cider Vinegar

Instructions
 

  • Pre heat oven to 180 degrees Celsius. In a food processor add the bananas and milk and blend until combined. Add remaining ingredients and blend until well combined. Add to a greased loaf tin and bake at 180 d C for 40mins (fan forced oven).
