Zucchini and Pesto Salad

Equipment

  • Vegetable Spiralizer or Vegetable peeler

Ingredients
  

  • 1 Zucchini
  • 2 Cucumbers
  • 2 cups mixed salad leaves
  • 1 Bunch Basil
  • 1/3 cup Extra Virgin Olive Oil
  • 2 tbs Apple Cider Vinegar
  • Salt and Pepper
  • 1/3 cup pumpkin seeds (or pepitas)

Instructions
 

  • Chop cucumber into chunks. Set aside in a large salad bowl.
    Spiralize Zucchini or peel into ribbons if you don't have a spiralizer. You can also use a mandolin and just Julienne the zucchini. Add to salad bowl.
    To make Pesto, add bunch of basil to a food processor (stalks removed) salt and pepper, 1/3 cup pumpkin (or pepita) seeds, EVO and ACV and pulse to combine. You want the pesto chunky not smooth.
    Once made, add to salad bowl with the salad leaves mix, and toss through 1 heaped table spoon of the pest per person. Toss thoroughly to cover in the pesto.
    Enjoy with a side of protein like chicken, sausages, beef, lamb etc.
