03 May Gluten Free Coconut Flour Flatbread
Gluten free cooking ain’t easy. There are heaps of gluten free flours on the grocery shelves, but not all of them are healthy options. Coconut flour is one of my favourite gluten free options.
However it have taken me so many fails to actually learn how to use coconut flour. Its not the easiest flour to use because it is so absorbent. You only need a very small amount because it expands so much. This is kind of a good thing because it is a very fluffy flour if used right… but it can also be very dry. So there is a happy balance between getting that fluffy texture that is not dry. Adding eggs are a great binding agent but i always like to add a little arrowroot flour as a binding agent.
Whats good about it:
- Coconut flour is very low carb, so very popular among keto and paleo folks. I personally like that its easy to flavour.
- Coconut flour is very low allergen. Being a foodie that focuses on gut health this is a great flour that will not damage your gut lining and be easily digested with little to no discomfort.
- Very versitile. This can be used as a bread sub and can be frozen for later use.
Coconut Flour Flatbread
Ingredients
- 1 tbs coconut flour
- 1 tbs arrowroot flour
- 1 egg
- 3 tbs milk (preferable plant based)
Instructions
- Add all ingredients to a small bowl, mix. Fry on low to medium heat in a nonstick frypan on both sides (like a pancake). Enjoy.
