Who doesn’t like ice cream?????
Traditional dairy ice cream is a no-no for me.
When I think of cream and milk it just makes me break out. My gut just really doesn’t like dairy. While I have had some genetic testing I can digest lactose i just does do well with casein and I break out like crazy so I just steer clear of the stuff apart from the occasional cheese, because who doesn’t like cheese (am-i-right ?)…
When i first started eating healthy ice cream had to go, but this recipe is gut friendly and healthy.
On my health journey I have played around with store bought vegan ice cream but its usually full of crap and expensive. I have found a few coconut ice cream’s I approve of but honestly I have better things to spend my money on because coconut ice cream usually goes for $15 for a small tub which is day light robbery.
Avocado is a really good ice cream base because its creamy and can be easily flavoured so I played around with a few flavours I might like and came up with this gem! Kaffir lime and coconut!! Creamy, fresh and healthy.
I have made this with the addition of matcha and its great for a little arvo caffeine kick as well as being highly antioxidant rich.
Also you can use what ever sweetener you like, I used rice malt syrup because the flavour is very mild. You can use honey, xylitol or coconut sugar, but keep it minimal.
It made 8 popsicles in the moulds I had, however you can make in a freezer safe bowl and scoop out into a bowl if you don’t have moulds.

- Zest 2 limes
- Juice 2 limes
- 3 Kaffir lime leaves (chopped)
- 2 cups coconut milk
- 1 tbs vanilla extract
- 1/4 cup rice malt syrup
- 1 tsp tapioca flour
- 1 avocado
- Optional: 1 tbs Matcha powder
- Zest the limes, Juice the limes and add to a blender. Take the stalks off the lime leaves and chop. Add ALL ingredients to blender and blend until combined. Strain through a sieve and pour into popsicle moulds or into a container to freeze. Freeze overnight and enjoy.
