26 Sep Asparagus, Mushroom + Dill… One Pot Breakfast
Breakfast is my all time fav meal of the day, I wake up excited to eat… mainly because I’m obsessed with food, but also because I love creating new ways to nourish myself.
This dish is loaded with fermentable fiber and prebiotic goodness to nourish and feed your gut bugs. Asparagus is a fermentable fiber + onion (optional garlic) are prebiotic food so will give your bacteria a kick start to the day. Eggs are a great source of protein to keep you full and satisfied throughout the morning and dill adds a little kick of flavour. You can sub the dill for another herb if you are not a fan of dill (parsley and basil work well as subs).
SERVES 1 (or 2 depending on pan size)
/ 1/4 red onion
/ 1 clove garlic (crushed)
/ 4 stalks of asparagus
/ 2 button mushrooms chopped
/ sprinkle of dill or herbs of preference (basil also works well)
/ 2 free range and organic eggs
M E T H O D: Heat grass fed butter or coconut oil in the pan, add garlic and onion. Cook slightly then add the mushroom and asparagus, cook lightly. Sprinkle in herbs and give a quick stir. Crack eggs over the veggies, cover with a lid and let cook all in the one pan. Finish with a sprinkle of Himalayan (or good quality) salt and pepper. Enjoy in small fry pan to save on washing up.
S E R V E: With a side for sauerkraut OR a drizzle of lemon flavoured milk kefir.
