16 Mar Coconut Flour “bread” (GF)
As we know gluten is not your best friend if you have digestive issues or any symptoms for that matter. It is associated with all sorts of health issues… you can read more about them HERE + HERE.
I have tried lots of gluten free options and this recipe is by far the most versatile and useful. Is can be sweet and savory and frozen for convenience.
I have used coconut flour because I feel it gives it the best flavour and fluffy texture however you can opt for buckwheat flour too (if using buckwheat flour you will only need to use x1 tbs of liquid). These flours are gluten free and more nutritious options to regular flour. They don’t have much flavour so you can add herbs and spices to jazz them up depending on what you are making. This is my version of Wonder Bread because it is so versatile. I usually double the recipe and make a heap to freeze so i can just grab and go when i know good food wont be an option.
RECIPE – Coconut flour flat bread
- 1 tbs coconut flour
- 1 tbs tapioca flour
- 1 egg
- 3 tbs almond milk or milk of choice
METHOD:
Mix all together into a bowl and cook in a frying pan with a little butter or coconut oil. Season with salt and pepper. The coconut flour does expand and take in a lot of liquid so if the batter seams to be setting then add a dash of water or more milk to thin it a little so you can pour it into the pan easily.
OPTIONAL:
I usually add herbs such as Italian herb mix, sage or parsley for added flavour OR spices such as cayenne pepper, cumin and/or turmeric. Top with sesame seeds both black and normal for added flavour.
I usually use these for a quick breakfast, top with avocado and an egg, or have for lunch as a bread and make a sandwich. You can also make healthy burgers and uses these as the bun. Or turn into a sweet pancake by adding some honey or rapadura sugar.

PANCAKES: I added 1 tbs of honey for a bit of sweetness, cooked some blueberries for a sauce and topped with milk kefir.
FLATBREAD: A good alternative to toast, i enjoyed for breakfast with eggs and sauteed veg. Can be enjoyed as a snack or breakfast with topping of choice. Here i had smashed avo and kefir cream cheese with olive tapenade.
BURGER BUN: Can be used to hold together a nice burger, for guilt free pleasure.
